Mother’s Day Brunch, and My Delicious French Toast Recipe

It’s Mother’s Day, which means matching outfits with my mommy – a now 6 year tradition. If there was one thing I was gonna make sure of, it was that this Covid-19/quarantine mess was not gonna break tradition!

This year I decided to go for same dresses, different colors. I wanted something girly and romantic, and I fell in love with these Topshop dresses. This dress was totally out of my mom’s comfort zone, but I love the delicate chiffon and the flow on her! I also love the vibrant spring pink of my dress!

We had an early little Mother’s Day brunch at my house. Who said you can’t get dressed up for brunch at home??

I shared the recipe for my oh so easy, delicious and beautiful Brioche and Berry French Toast! In case you missed the story (it’s also on my TikTok but I am still new at this and wrote all the ingredients right over my caption… smh), here’s the deets:

INGREDIENTS

  • 1 Brioche loaf
  • 1/2 cup of milk (you can use whichever kind you like)
  • 1 sliced strawberries
  • 1/2 cup blueberries
  • 6 whole eggs
  • 2 tsp honey (you can also use agave)
  • 1 tsp cinnamon
  • 1tsp pure vanilla extract
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • powdered sugar, for dusting
  • warm maple syrup

INSTRUCTIONS

  1. First, arrange your brioches slices in a baking dish. I adore THIS Emile Henry bakeware from Williams Sonoma. It is amazing and also so beautifully designed.
  2. In a bowl, whisk together the milk, eggs, vanilla, and spices.
  3. Add your egg mixture to you loaf, making sure to evenly coat each slice [you can also soak the slices and THEN arrange them into the pan but sometimes the bread breaks apart – either way works though!].
  4. Layer in your fruit. You can play around with this and add any fruit you like – it always comes out amazing!
  5. Let the bread soak in the mixture for about 20 minutes. In the meantime, preheat your oven to 375F.
  6. Bake your toast in the oven for 20-25 minutes, or until the edges of the toast have browned slightly. Also when you open that oven door, it WILL smell like heavennnn!
  7. Once done, add some powdered sugar to a sifter and dust the toast. This is not necessary, but it’s fancy AF.
  8. Serve with warm maple syrup (cold is alright too, I guess LOL).
  9. Enjoy!

I love this recipe, because it is really easy and doesn’t take much time or effort. You can used fresh fruit/canned fruit; you can add nuts, chocolate chips, seriously so many yummy options. It’s also great if you have a big family and you’re serving lots of people, because let’s be real, who wants to sit and flip enough pancakes or french toast for 6?? It looks stunning layered and adorned with the fruit, and best of all, it’s soooo yummy, you’ll want to have it every weekend.
